  5. What’s Brewing at Tea Global

1. Stir Tea of the Month – Black Tea - Assam

  • This popular Stir Tea is from a tea garden located in Upper Assam in the north eastern province of Assam, India.   This country produces around 980 million kgs of tea per year and is the second biggest tea exporter, second to China. This tea growing region experiences very high rainfall and extreme temperatures - this greenhouse-like combination of humidity and heat provide the perfect tea growing conditions. The harvest season on this tea garden runs from March to November. During the first quarter of 2009 lower levels of rain has resulted in a 15% drop in tea production.
  • Stir Tea - Assam is a delicious, tippy (containing golden leaf tips) black tea which can be enjoyed with or without milk.    It is characteristically malty with a full bodied richness which makes it an ideal breakfast tea – often you find the Assam leaf forming part of a traditional English Breakfast Blend.

2. Recipe of the Month - Masala Chai
(Masala = a mix of spices, chai = tea)

  • This is a delicious sweetened black tea drink enhanced with spices and milk. Stir Tea - Assam is the perfect black tea to use.  The origins of the recipe are attributed to the traditional Indian natural form of healing called Ayurveda which incorporates as part of its practice combinations of spices, herbs and sweeteners to assist with curing bodily ailments.

Why not offer a rich velvety cup of Masala Chai to guests after dinner rather than dessert.

3. Tea Tips:  Extend the Life of Your Tea

In order to keep your tea fresh store in an air tight container (or the Stir Tea resealable pouches) in a cool, dark place in order to avoid the following ‘enemies of freshness’:

  • Moisture – Tea is generally manufactured and sealed at around 3% moisture content.  Normal kitchen temperatures and humidity lead to a moisture content of around 8%.  At this level tea begins to lose its freshness.
  • Air – Tea left exposed to the air will also be exposed to the moisture and contaminants contained in the air.
  • Heat –If dried tea is exposed to heat its flavour is flattened and dulled. Even worse prolonged exposure to heat above 85 degrees can result in mould.
  • Light – Fading in the leaf can be caused by light.  Light is also a source of heat.
