Try incorporating tea into your cooking with this simple, healthy and delicious broccoli soup. Based on a recipe from The Ultimate Tea Diet by Mark Ukra we have used Jade Oolong tea from the Stir Tea range in this soup.
Ingredients:
1 tablespoon olive oil
1 medium onion – diced
500 grams broccoli florets
2 cups brewed jade oolong tea
(resteep the tea leaves for a cup of tea while you cook)
3 cups chicken stock
Freshly ground black pepper
¼ cup shaved or grated parmesan cheese (optional)
Heat the olive oil in a large saucepan. Add the onion and
cook until translucent, approx 5 minutes. Add the broccoli, brewed oolong
tea and chicken stock. Cook over medium to low heat until broccoli is
tender, approx 20 minutes.
When cool blend in small batches in a blender (hold lid firmly to prevent
splatters). Reheat and season the soup to taste with freshly ground black
pepper. This soup is delicious on its own or you may choose to serve it
with a sprinkling of fresh parmesan cheese.
I choose to sprinkle the parmesan cheese on a lightly oiled flat
bread or tortilla and then grill it to accompany the soup.
